Spencer Cocoa is Australian-made bean-to-bar chocolate, produced by a team dedicated to quality and integrity.

“We buy cocoa beans directly from a small group of families on the island of Malekula, Vanuatu who grow, harvest, ferment and dry the cocoa. Twice a year we visit them to catch-up and select the new-season beans.

Back in Mudgee, we roast, grind, conch and temper the cocoa into beautiful chocolate.”

Spring cocoa harvest 2014... off to Vanuatu next week!

Cocoa trees produce two crops per year, one from April-June (Autumn) and the second, smaller Spring crop, over September-November.

We source our beans from Malekula (Vanuatu), visiting twice a year to catch up with the growers and buy new-season cocoa beans... in fact we're heading back next week for the Spring harvest!

Single-plantation chocolate is a bit like wine made from a single vineyard… expressing a flavour and aroma unique to the soil and climate of where the cocoa beans are grown... and season to season there are differences too!
